During my tastings honey comes alive and takes new unexpected shapes.

Pairings with seasonal local ingredients, including wild plants and flowers, handmade beeswax tableware - all of it helps to tell the stories hidden within honey. The stories that were there all along and have been waiting for you to start listening.

Sometimes they smell of vanilla, sometimes - of fermented cabbage. Sometimes they are black like tar, sometimes - amber coloured.

Who/what's behind it?

Not to fill our minds with facts, but to see differently - to recognize what is truly important, meaningful, and worthy of being noticed. So that we leave changed from who we were before we knew. So that we stop looking for miracles in faraway places - or, stranger still, claiming that there are none. To finally awaken the receptors for wonder that have been dormant within us all along.
